When it comes to easy weeknight roast chicken recipes, this one takes the cake! Not only is it delicious and healthy, but it's also super simple to make. All you need is a few basic ingredients and about an hour of your time.

To get started, preheat your oven to 375 degrees Fahrenheit. Then, prepare your vegetables. We recommend chopping up some carrots, onions, and potatoes into bite-sized pieces. Once they're all chopped up, spread them out in an even layer on a roasting pan or baking dish.

Next, place your chicken breasts on top of the vegetables. If they're too thick, you can cut them in half horizontally so that they cook through more evenly. generously season your chicken with salt, pepper, and dried herbs like thyme or rosemary.

Now it's time to bake everything in the oven! Bake the chicken and vegetables for about 40 minutes, or until the chicken is cooked through and the vegetables are nice and tender. Serve hot with a side of your favorite dipping sauce or gravy. Enjoy!

5. Quick, easy and healthy - perfect for a busy weeknight!

I'm all about quick, easy and healthy meals - especially during the busy weeknights! Here's one of my favorites that's perfect for those nights:

Ingredients: 1 lb. boneless, skinless chicken breast, cut into small strips 1/2 cup teriyaki sauce 2 tablespoons honey 1 tablespoon vegetable oil 4 cloves garlic, minced 1/2 teaspoon ground ginger green onions, for garnish (optional) Instructions: In a large bowl, whisk together teriyaki sauce, honey, vegetable oil, garlic and ginger. Add chicken strips to the bowl and coat evenly with the marinade. Cover and refrigerate for at least 30 minutes (or up to 12 hours). Preheat oven to 400 degrees F. spray a baking dish with cooking spray and place chicken strips in the dish. Bake for 20-25 minutes or until cooked through. Garnish with green onions if desired. Serve over rice or noodles. Enjoy!
